This is not low-fat, but still very good. And Charlie never worries about fat.
Ingredients:
12 ounces dried pasta
5 bacon slices, diced
1 red bell pepper, diced (about 1 cup)
1 onion, chopped
1 cup (4 oz.) shredded fontina cheese
1/2 cup (2 oz.) crumbled blue cheese
1/2 stick butter (4 oz) cut into pieces
1/4 cup chopped toasted walnuts
2 tablespoons green onions
Preparation:
Cook pasta according to package directions, drain. Meanwhile, in a large saucepan cook bacon until crisp. Drain on paper towels, wipe pan out, leaving just a light coating of bacon grease. Add red pepper and onion and cook over medium high heat until tender, about 5 minutes. Add spinach and cook until it wilts, about 1 minute. Remove from heat, stir in butter, cheeses, drained pasta, toss until cheese melts. Garnish with walnuts and green onions.
